Pensato Vegetables

Artichoke

220 gram

The famous Violetto Di Ferdinando artichokes are marinated in the Pensato extra virgin olive oil. They are harvested once a year in May.

These particular artichokes are especially crisp with  tender hearts.

Olive Tapenade

115 gram

The Peranzana olive is ripened and ground together with a blend of Italian seasoning.

No anchovies are used for this tapenade.

Sun-dried Tomatoes

220 gram

San Marzano tomatoes are harvested once a year in the month of July and August.

Pasteurized only once for ultimate freshness the tomatoes are slowly sun dried according to ancient tradition and marinated in Pensato extra virgin olive oil with oregano garlic and pepper.

The Vinegars

Balsamic di Modena 5 years

The balsamic Vinegar is a culinary specialty from Modena. In the end of autumn the Trebbiano grapes are harvested with the greatest care. The grapes are cooked long hours to produce must, the essential ingredient for balsamic vinegar. Then to secure the vinegar is of highest quality, the must is placed into oak barrels, which get smaller every year. As time goes by the magic takes place and the balsamic vinegar gets more and more precious.

Balsamic Glaze

The balsamic glaze is made with 100% Trebbiano grapes that are hand harvested, the musts is slowly cooked then Aged in French oak barrel. Most glazes contain a low amount of must. Fernando Pensato balsamic glaze contain 40% must. (This product contains xantan gum).

Balsamic Vinegar

The balsamic is made with 100% Trebbiano grapes that are hand harvested. The musts are slowly cooked then aged in the traditional way in French oak, juniper, raspberry, chestnut, mulberry and cherry wood barrels. Some of the barrels used in this process are over 100 year old.

The balsamic is made with 100% Trebbiano grapes that are hand harvested, the musts are slowly cooked then aged in the traditional way in French oak ( this product contains xantan gum).

Lambrusco Wine Vinegar 3 years

Made from Lambrusco and Trebbiano grapes it is aged in French oak barrels the old fashion way with “la mere”. This wine vinegar makes the perfect mignonette.

White Balsamic Vinegar 3 years

The balsamic is made with 100% Trebbiano grapes that are hand harvested, the must is slowly cooked at low temperatures in a vacuum to avoid darkening the blend. The aging process is done in French oak barrels that give the vinegar its light amber color.

Basil and Peperoncino Peppers Extra Virgin Olive Oil

The basil, peperoncino peppers or truffles are sun-dried then placed into a canister with the Fernando Pensato extra virgin olive oil for one month. The oil is then skimmed off.

Bergamote Extra Virgin Olive Oil

The bella pasta artisan egg pasta has been produced in an honored tradition that has been passed though the Fernando Pensato family for over two hundred year. The home made production process respects the Pensato tradition of excellence as well as the Italian artisan pasta traditions. This creative process guarantees the products unique characteristics such as rapid cooking (less than 2 min) and the perfect absorption of any sauce. The Pensatos dry the pasta slowly in open air. The semolina is organically grown on private property and the fresh eggs come from the neighborhood farm. The dough is obtained in a meticulous process that requires the egg to be broken by hand to retrieve fresh yolk, and then the pasta is slowly dried for 72 hours. La bella Pasta holds its structure according to old traditions. Few egg pastas are able to achieve the lightness and digestibility of Fernando Pensato Pasta.
